Abacus has launched a refreshed menu in time for Spring, designed around their usual concept of sharing plates and fresh local ingredients.
House-made Crisps
There is a distinct difference between store-bought and house-made. The crisps were extremely thin that it was half transparent from the oil, and was delicately crunchy.
Mooloolaba Tuna Tartare $22
The tuna was rather meaty, with roe and orange pieces creating a refreshing and tangy flavour.
Werribee Cauliflower Salad $19
The cauliflower salad was a hearty meal in and of itself, seasoned and cooked well with a roasted slightly nutty flavour. Served with wild rice, dukkah, coconut yoghurt and pomegranates.
Chicken Liver Parfait $22
Thick yet smooth texture with a rich flavour, the liver is served with caramelised kumquat, nuts and beetroot, and eaten with Lavosh crackers.
Cape Clear Pork Belly $36
A simple and well-executed pork belly with well seasoned and tender meat and a bit of stickiness to the skin. The honey which is from their own hives is charred alongside the corn upon serving, which enhanced the flavour, in particular the sweetness of the honey.
Magnificent Manchego Corn Cake $16.00
A dessert designed in collaboration with Haagen-Dazs and Broadsheet.
The warm corn cake with cheese layer in between is served with Earl Grey foam which added a slight bitterness, and Mango and Raspberry Haagen-dazs ice-cream which provided a contrasting sweetness.
I have been here twice, and have sampled their winter menu as well. The high quality execution of each dish is certainly impressive.
