Park St Dining
No doubt what attracted me to Park St Dining were the creatively presented dishes on their Instagram page. My first choice were the Beehive Waffles which was loaded with different components, honey comb shaped waffles, meringues shaped like beehives, freeze dried orange slices, chocolate soil, corn flakes, yuzu curd, grilled lemon, popping boba and a tiny jar of honey from Melbourne City Rooftop Honey. Although the waffles appear small in photos they're actually rather decent-sized when you take into account all the sides. The waffle itself had a thin crispy outer, with a super fluffy inner. The dish was a fusion of sweet, tangy and sour. By the third waffle it did get too sweet for me!
To counter the sweetness I also had the Cured Salmon which was a thick cut with tender protein, however not the melt-in-your-mouth type. The taste didn't have any other distinct flavour than regular salmon but it was easy to chew with no stringy sinewy bits, the pink sauce on top of the poached eggs had a tangy flavour . The potato rosti was also delicious with a strong rustic flavour with chunky potato within.
Service speed was good and the staff at the entry was happy to accommodate me in changing tables for better lighting. (thank you for approving my selfish request!)
